Stuffed Peppers with Feta Cheese


                                                     Stuffed Peppers with Feta Cheese

Another traditional summer Greek appetizer or meze as we call it. The main ingredient for this dish is the feta cheese and as you already know I always prefer Kefalonian feta it's spicier.
This is a recipe my cousin passed on to me from one of her favorite restaurants, here on the island of Corfu. You can serve this meze with a lovely glass of dry white wine. This is a great appetizer if you have family or friendly get togethers.



Ingredients:

8  long green peppers ( sweet kind) ( this is a serving for 4 people) 
14 oz  or 400 grams of Feta Cheese 
1 tomato pureed in blender
salt, pepper , Oregano 
1/2 cup of olive oil
* Tobasco Sauce,  if you like it spicy



One fresh tomato


Puree in a blender


Empty the tomato in a soup plate or in a bowl.


Take your feta slice and place in the plate add about 6 tablespoons of olive oil, pepper, oregano ( fresh would be better), crushed fresh tomato and if you want them a bit spicy add a few drops of tobasco sauce.


Mash the feta cheese with the purred tomato.


Take your long peppers cut the top off, set aside and clean the inside, sprinkle with a dash of salt and your peppers are ready to be stuffed.



Once you have stuffed all your peppers with a toothpick put the tops back on. Sprinkle with salt, pepper,oregano and olive oil. Bake for about 20 minutes or until brown.

Baked Feta Cheese

Feta Cheese,being Greek  you know I just love Feta, it's a must on our table. My favorite feta is, Kefalonia it's spicy and delicious !!!
You will need
A terra cotta pan ( tastes better) you can use any pan
1 pound of any feta cheese ( crumbled )
1 big tomato pureed in a blender
1 long green pepper
8 tablespoons of olive oil
salt, red hot pepper and oregano to taste
Bake for 1/2 hour at 350  or until feta has melted

Crumble your feta cheese in your pan, add your pureed tomato, your cut up
green pepper ( red will also do) add your oil, less than a pinch of salt, red pepper as much as you like and
finally, add your oregano and bake and serve. This is good to eat with Greek bread ( but any bread will do)
