Romaine Lettuce with Cherry Tomatoes


A two ingredient-   A  two minute salad! 







Ingredients:
  • 1 Romaine Lettuce
  • 1/2 pound of cherry tomatoes
  • salt
  • vinegar
  • olive oil
The other day  feeling exhausted from running errands and being a portable taxi, I needed a quick fix that was also healthy. I opened my refrigerator, I surveyed the area, my eyes spotted  Romaine Lettuce and juicy, ripe, Cherry Tomatoes perfect for a quick pick me up brunch! With only two ingredients and it only took two minutes to make Romaine Lettuce and Cherry Tomatoes hit the spot!  Hearty Salad Recipes, are a favorite. of mine. I don't think a day goes by that I don't have salad on my table! Don't forget, salads are beneficial in our daily diet, they are nutritious and always packed with the necessary vitamins to revitalize our bodies.

TIP: This quick salad can accompany all your kiddie  and adult parties! You will not believe the positive feedback I always receive when I serve Romaine Lettuce with Cherry Tomatoes Salad.

Orange Salad

The first time I ever tried this was with my father - in- law, a humble man, with very simple ways. He couldn't believe that I had never tried this before. So, I would like to say thank you,  to my father-in -law for introducing me to this wonderful, refreshing recipe. A simple man that knows his food! This type of recipe will work very well with Sunkist Oranges, we use Merlin Oranges, delicious !!

Ingredients
2- 3 Oranges
Olive Oil
red mild pepper
Bread

TIP: This recipe tastes better when  you have Greek bread. If you live in New York, head down to Astoria, plenty of Greek Bread. If you have an Italian Bakery store near your neighborhood, they carry an equivalent to Greek Bread.

                                                       


For the children I usually use 1 and 1/2 orange for a small plate.



Cut the oranges in small pieces, add as much oil as you would like, sprinkle with red pepper and it's ready !! In under 5 minutes !

Farmer's Salad a.k.a Horiatiki Salata

Farmer's Salad, is exactly what the title states, right from the garden and into your dish. Known to Greeks as, Horiatiki Salata ( here I go with my Greek words again ;) ) the word horiatiki , means village. In Greece the salad was made from whatever the villagers grew, this was the inception of organic food. In most restaurants it's very well know as Greek Salad.  It's simple, refreshing and most of all  healthy.

I grew up in Queens, my mom always had a small garden in our backyard and each summer we had a horiatiki salata on our table. My dad had a smile on his face when  my mom's tomato patch was ripe and ready for the table.

All my ingredients are right from my mother - in - law's garden even the oregano. 

                                                              


Ingredients:

1 fresh cucumber
1 fresh tomato
1 fresh green bell pepper
1/2 onion fresh or regular
1 teaspoon oregano
* some feta cheese to dress it up ( optional ) 
salt to taste 
vinegar and olive oil to dash on top 


Cut your cucumber, tomato, onion and pepper in a bowl. First, add salt and vinegar. Secondly, cut your feta cheese and place on top of salad. Finally, pour olive oil over feta and then sprinkle with oregano. Your horiatiki salata is ready !! Kale Orexi
