This recipe made A&S a hot spot for hot dogs ! Spyros, was my dad, a great dad, a man who had no formal education and yet gave me my first entrepreneurial lessons. At A & S we had the best hot dogs because we served them with homemade onions, "Hey Spyros, give me a dog with homemade onions" These were words echoed in the store on a daily basis. A recipe filled with memories that encompass a whole life filled with obstacles, happiness, failure and success. It might be a simple recipe but there'so much attached to this, it's the brick and mortar of what he accomplished. I dedicate this to my dad who passed away on May 3,2014 and I want to thank him for every lesson he has taught me.
Ingredients for 8 hotdogs
3 regular sized onions
1/2 teaspoon paprika
1/2 teaspoon oregano
1/2 cup of olive oil
1 1/2 cup water
2 tablespoons tomato paste
salt & pepper to taste
You will need 5 -6 medium onions
Slice onions as shown in picture.
Place onions in pot add olive oil and saute for about 10 minutes.
Add 1 cup of water and let boil for 1/2 hour
After 1/2 hour add remaining ingredients and 1/2 cup of water boil until onions are tender and until sauce thickens and it's ready to serve.
* Tip: you can also spread the onions on plain bread or even on top of roast beef.

ReplyDeleteI've never made onions like that,I usually just caramelize them by sauteing on low, but I'm going to try them your way! Your hot dogs and onions look amazing!
