String Beans a.k.a Fasolakia Yiahnnee

Yum

This is a delish Greek traditional recipe and you can always find it in Greek restaurants or taverns. I have tweaked the recipe according to my family's liking but I have included all original ingredients. This is a healthy dish for everyone.


Green String Beans a.k.a Fasolakia Yiahnnee

Recipe by Mommy's Kitchen
Prep time: 20 minutes
Cook time: 45 minutes
Yield: 4-5
Ingredients
  • 1 1/2 pounds fresh or frozen string beans
  • 1 large tomato
  • 1 large onion
  • 3 garlic cloves
  • 3 tablespoons parsley ( optional)
  • 1/2 teaspoon sugar (optional)
  • 1/2 teaspoon cinammon(optional)
  • 2 big carrots
  • 2 tablespoons tomato paste
  • 1/2 cup olive oil

      Chop up your garlic,tomato , carrots and onions. Saute for about 10 minutes add your fresh or froezen string beans. I used frozen string beans, they cook faster than the fresh ones.


                                 At this point if you like the parsley you add it,of course chopped up.


Saute for another 10 minutes add oregano, salt and pepper to taste.



Cover with water, boil at high for 30 minutes.




When they start to simmer add your tomato paste and if you like add the cinammon and sugar. I prefer it like this. Or, if you don't like it with tomato paste, omit it and add lemon. Either way they taste delicious and they are very healthy.


Serve with whole wheat bread,olives and feta cheese.

  4. I have green beans and tomatoes growing in the garden now. I'll be making this once they are ready. I never would have thought to add cinnamon to them. #ibabloggers

  7. Wow, that sounds really delicious! The cinnamon is such an interesting idea. If you have tried it with and without the cinnamon is there a noticeable difference? Which one did you like better? #ibabloggers

    I prefer them without the cinnamon and yes there is a noticeable difference. Sometimes I do use the sugar I like almost anything that is sweet.I usually use cinnamon in red sauces.
